In Journey there are in total 21 Unique symbols which must be collected to unlock the Transcendeza trophy. Here is a video that shows exactly where they are, remember that it is possible to collect them even in the course of multiple games:

Pay attention: to save the progress of the collected Symbols you will have to get to the end of the chapter, enter the meditation circle and pass the intermission sequence that leads to the next chapter.
