As we have already seen in the guide to all the DOOM collectibles for PS4, PC and Xbox One, the developers of the game have included classic maps belonging to the original DOOM 1 and 2 in every mission of the game. Watch the video to see how to unlock them:

As you can see, in each mission a particular lever is hidden which, once activated, allows you to play a small part of the classic level within the mission. Keep in mind, though, that to play the full "retro" level you need to start from the "Classic Levels" option on the campaign menu screen.
