In Battlefield 1 there are 66 field manuals scattered in the 5 chapters that make up the story and you will have to collect them all to be able unlock the "Textbook Collector" trophy / achievement.

Remember that you can retrieve the field manuals not taken by replaying the missions from the select chapter menu in which you can also check which ones you have already collected and which you are missing. Progress is saved as soon as you collect a collectible, so there is no need to make it to the end of the level or collect it again if you die.
